  • 1 packet Slendier Black Bean Fettuccine
  • 2 tbs grapeseed oil
  • 1 clove garlic, crushed
  • ½ onion, thinly sliced
  • 3cm piece ginger, grated
  • 2 long red chillies, split, seeds removed and sliced
  • 500g lean beef strips
  • 2 tbs soy sauce
  • 2 tbs black bean sauce
  • 2 tbs mirin
  • 4 baby bok choy, quartered
  • 4 spring onions, finely sliced on an angle
  • ½ cup coriander leaves, finely shredded
  • 10 Vietnamese mint leaves, finely shredded, to serve
  • fried shallots, to serve


  1. Prepare Black Bean Fettuccine according to the directions on the packet. Drain and set aside until needed.
  2. Place a non-stick wok over medium–high heat. Add the oil, garlic, onion, ginger and chillies and fry briefly until just soft, about 1 minute.
  3. Add the beef strips and stir fry until just cooked through.
  4. Add the sauces and bok choy and stir fry until the bok choy is just wilted.
  5. Add the spring onions and coriander and toss to combine.
  6. Divide the Black Bean Fettuccine between 4 serving bowls. Top with beef mixture, then sprinkle with shredded mint leaves and fried shallots and serve.
