Ingredients

  • Slendier Konjac Spaghetti style
  • 1 spring onion, minced
  • 1 clove of garlic, minced
  • 2 tsp sesame oil (divided)
  • 2 tsp sesame seeds
  • 1 tsp black pepper
  • 4 tsp honey (divided)
  • 2.5 tbsp soy sauce (divided)
  • 100g lean beef
  • ½ a zucchini
  • 3 tsp salt
  • ½ cup of bean sprouts
  • 1 small onion cut into strips
  • ½ medium carrot cut into small batons
  • ¼ cup neutral oil
  • Fried egg to serve (optional)

Directions

1. Prepare Slendier Konjac Spaghetti according to package instructions.

2. Prepare the marinade by adding spring onion, garlic, 1 tsp sesame oil, sesame seeds, black pepper, 2 tsp honey and 1.5 tbsp soy sauce to a bowl. Add the beef to the bowl and allow to rest while you prepare the rest of the ingredients.

3. To prepare the zucchini, slice into thin batons and sprinkle with 3 tsp salt. Place in a colander and allow excess liquid to drain out. After a few minutes squeeze any leftover liquid out and place zucchini on a paper towel to dry.

4. To prepare bean sprouts, snap off the sprout and the tail so only the white stem remains. Then blanch all the bean sprouts in boiling water for 30 seconds and drain. Set aside.

5. In a non-stick skillet, over medium heat, heat one 1 tbsp of oil. Once hot add Slendier Spaghetti as well as 1 tbsp soy sauce, 2 tsp honey and 1 tsp sesame oil. Sauté until the spaghetti is heated through and sauce has cooked out. Divide between 2 bowls.

6. In the same pan, sauté the vegetables one at a time over medium heat until only just soft (about 2 minutes each depending on the size of your cuts). Start with the carrot, then the onion and finally the zucchini. Add additional oil in between as necessary. Place each vegetable on top of the spaghetti as they are done cooking. You want to create and wheel of colours on top of the noodles so place each vegetable next to each other.

7. Place the bean sprouts on top of the spaghetti, next to the other vegetables.

8. In the same pan, over medium heat, heat 1 tbsp oil and once hot cook beef mixture until beef is browned and starting to caramelize. Remove and place on top of the spaghetti, next to the vegetables.

9. Garnish with a fried egg as well as additional sesame seeds.
