Inspired Chinese Longevity Noodles with Prawns

Ingredients

  • 250 grams Slendier Angel Hair
  • 2 Spring Onions, finely sliced
  • 1 Medium Carrot, julienned
  • 1 Small bunch Bok Choy
  • 1 teaspoon(s) Vegetable Oil
  • 1 Garlic clove, crushed
  • 1 tablespoon(s) Low Sodium Soy
  • 350 grams Green Prawns with tails intact
  • 1 Garnish with mint

Directions

  1. Prepare Slendier Angel Hair as per instruction on the pack and set aside
  2. In a large pan add vegetable oil and gently heat. Add prawns and cook for 3.5 minutes or until cooked through. Remove from pan and set aside
  3. Add garlic to pan, and cook until fragrant, add bok-choy and carrot and cook for 1-2 minutes. Add soy sauce and prepared Slendier Angel Hair to pan and toss gently. Add prawns and toss through
  4. Remove from heat and serve, Divide evenly into bowls and garnish with fresh mint.

The Chinese believe that long strands of noodles symbolise good health and long life, therefore longevity noodles are a very auspicious dish. Longevity noodles are eaten on the eve of the Chinese New Year and is said to usher in a full year of good health.
