Ingrediënten

  • 2 x packet of organic fettuccine (500g)
  • 250g braising steaks (chopped roughly)
  • 60g plain flour
  • 1 Tbsp olive oil
  • 150mL red wine
  • 1 red onion
  • 1 carrot
  • 1 red capsicum
  • 300g sweet potatoes
  • 1 garlic clove
  • 1 red chilli (deseeded and sliced)
  • 1 sprig of thyme
  • 1 bay leaf
  • ½ tsp ground cinnamon/cumin & coriander
  • 200ml can crushed tomatoes
  • 100ml beef stock (reduced stock)
  • 100g tinned kidney beans (drained)
  • 3 tsp olive oil

Routebeschrijving

  1. Prepare Slendier Fettuccine as per instructions on the back of the packet
  2. Toss the beef in flour, then brown half in a pan, using 1 tbsp oil. Once browned, spoon into a bowl. Add 50ml wine to the pan and scrape up any bits. Reduce a little, and then pour into the bowl with the cooked beef. Wipe the pan and repeat with the remaining beef and another 50ml wine. Meanwhile, whizz the onions, carrots and garlic in a food processor until finely chopped
  3. Add 1 tsp oil to the pan and tip in the chopped veg, red capsicum, fresh chilli, thyme sprigs and bay. Fry for 10 mins. Tip in the spices, cook for 1 min, then add the rest of the wine and reduce by half. Add the tomatoes, sugar, beef and stock, season with pepper if needed, then simmer for 1 ½ – 2 hours until the meat is very tender. Stir in the beans and allows to cool
  4. Slice the potatoes about 5mm thick then boil for 5 mins. Drain, then tip back into pan. Add thyme leaves, 1 tsp olive oil, season with pepper, then toss to coat. Tip the chilli mix into a baking dish, then layer the potatoes on top.
  5. Heat oven to 200C/180C fan and bake for 50 mins-1 hr, until the sauce is bubbling and potatoes golden.
  6. Serve up Slendier Fettuccine and generously lather the beef sauce on top.
