Dan Dan Style Noodles

Dan Dan Style Noodles with TVP (Textured Vegetable Protein) and Bok Choy

Serves 4

  • 2 x 400g pack of Slendier Konjac Noodles 
  • 1 tsp roasted sesame oil
TVP Mince
  • 1 cup TVP granules
  • 1/4 cup peanut butter
  • 3 tablespoons soy sauce
  • 3 tablespoons hoisin sauce
  • 2 tablespoons rice vinegar
  • 2 tablespoons brown sugar
  • 1 tablespoon sriracha
  • 2 teaspoons grated ginger
  • 4 cloves garlic, minced
Bok Choy
  • Vegetable oil
  • 4 baby bok choy, halved
  • 2 cloves garlic, minced
  • 2 tablespoons soy sauce
  • 2 tablespoons water
To garnish
  • 2 spring onions, sliced
  • Sesame seeds


  • Place TVP in a medium-sized bowl and pour boiling water over the top until just covered. Soak for 10 minutes to rehydrate.
  • While the TVP is soaking, make the sauce by adding all sauce ingredients to a medium-sized bowl – whisk to combine. 
  • In a large non-stick frypan or wok, heat a lug of vegetable oil over medium-high heat. Add the rehydrated TVP, half the sauce mixture and a ½ cup of boiling water. Cook for 2-3 minutes, stirring until sauce has combined and thickened slightly. Add an extra splash of water if needed. Remove from heat and set aside.
