Pea Pesto Pasta

Serves: 2

For the pesto:
  • 2 cups fresh basil
  • ½ cup pine nuts
  • Juice of 1 lemon
  • 2 garlic cloves
  • ½ tsp salt
  • Pepper
  • ¼ cup extra-virgin olive oil
  • 1 cup peas
  • Konjac penne
To serve:
  • Drizzle of olive oil
  • Lemon zest
  • In a high-powered blender, add basil, pine nuts, lemon juice, garlic, salt, pepper and olive oil.
  • Blend until smooth.
  • Meanwhile, cook Slendier Konjac Penne as per packet instructions
  • Place in a large serving bowl and combine with peas and pesto.
  • Serve in serving bowls and serve with a small drizzle of olive oil and a sprinkle of lemon zest.
