Pea Pesto Pasta

For the pesto:
- 2 cups fresh basil
- ½ cup pine nuts
- Juice of 1 lemon
- 2 garlic cloves
- ½ tsp salt
- Pepper
- ¼ cup extra-virgin olive oil
- 1 cup peas
- Konjac penne
To serve:
- Drizzle of olive oil
- Lemon zest
Method:
- In a high-powered blender, add basil, pine nuts, lemon juice, garlic, salt, pepper and olive oil.
- Blend until smooth.
- Meanwhile, cook Slendier Konjac Penne as per packet instructions
- Place in a large serving bowl and combine with peas and pesto.
- Serve in serving bowls and serve with a small drizzle of olive oil and a sprinkle of lemon zest.
