Spicy Peanut Noodles

Serves 4

  • 400g Slendier konjac noodles
  • 450g extra firm tofu, sliced into bite-size pieces
Peanut Sauce
  • 1 teaspoon of grated ginger
  • 3 minced garlic cloves
  • 2 tablespoons of soy sauce
  • 1/3 cup of smooth peanut butter
  • 1/2 cup of hot water
  • 1 tbsp sriracha
  • 1 tsp smoked paprika to garnish
  • 4 stalks spring onion, finely sliced
  • Chilli flakes
  • Sesame seeds
  1. Combine ginger, garlic, soy sauce, peanut butter, sriracha, hot water and smoked paprika in a
    small bowl to make the sauce.
  2. Pan fry tofu and cook Slendier noodles to packet instructions.
  3. Add the tofu to the noodles and pour the sauce over the top, mix to combine.
  4. Garnish with spring onion, chilli flakes and sesame seeds.
